Sticky Mannabrew BBQ Pork Ribs
These Sticky MannaBrew BBQ Pork Ribs are slow-cooked, deeply flavored, and unapologetically bold. The ribs are coated in a smoky espresso spice rub, then braised low and slow in wine, stock, and strong MannaBrew until fall-apart tender. They’re finished with a rich, sweet-heat coffee BBQ sauce and grilled (or braaied) to create a dark, sticky glaze with irresistible char. It’s a bit of a project — but the payoff is juicy, messy, next-level ribs.
Season the meat with the prepared spice rub for the ribs, ensuring a generous, even coating. Cover and refrigerate for 1 hour.
Preheat the oven to 200°C.
Combine the red wine, beef stock, strongly brewed MannaBrew Superfood Espresso, onion, carrot, garlic, and thyme in a deep roasting dish.
Place the ribs in the liquid mixture, cover with foil, and roast until fork-tender, 2-3 hours.
Remove the meat from the cooking liquid and drain on kitchen paper.
Turn the oven’s setting to grill.
For the BBQ sauce, place the tomato puree in a saucepan and cook while continuously stirring for 2 minutes.
Stir in the rest of the ingredients and simmer until thickened, 8-10 minutes.
Brush the ribs generously with the BBQ sauce and place it under the grill for 4-6 minutes per side until lightly charred.
Slice the ribs into portions and serve with fries or a salad on the side.
TIP: Instead of grilling the ribs, brush them with the marinade and cook them over medium heat on the braai for 4-5 minutes per side until lightly charred.
