MannaBrew Mousse

Ingredients:

2 cups sweet potato, peeled and mashed
1 cup coconut cream
1⁄2 cup strong MannaBrew Mesquite Espresso 6 tbsp cacao powder
4 tbsp maple syrup
2 tsp vanilla extra
Pinch of pink Himalayan salt

To serve: 

Coconut cream
Dark chocolate shavings Edible flowers

Method

Sweet potatoes can either be cooked or roasted. Prick with fork. Bake for 90min at 180C. 

Allow to cool, peel sweet potatoes. Add to bowl with the remaining ingredients. Using a stick blender, blend until smooth and creamy.

Scoop into glassware and serve with coconut cream, dark chocolate shavings and edible flowers. 

Enjoy with a hot cup of MannaBrew Mesquite Superfood Espresso.
